dry wines

Why is the wine "dry"?

Dry wine is called so for a reason. During its preparation, fruit sugar should completely finish fermentation, that is - "dry." Accordingly, in dry wine, sugar will not be present at all, but if the manufacturer decides not to wait for the end of the whole process, he will get a semisweet wine.

It turns out that both white and red wine can turn out from the same grape variety. It all depends on whether the peel is used in the production, because the peel is responsible for the color. White wines are not always aged for long (just about 4-5 years) or are not aged at all. This wine has light-straw, translucent golden color. Dry wines of yellow color indicate that they were aged in barrels, sometimes for 10-20 years.

dry wine aging

As for red wines, light red dry wine is aged in oak barrels for about 5-8 years, and for intensity the wine can remain on aging for 15 to 35 years. The thing is that over time, the acidity of the wine, as well as the content of tannins in it, is decreasing. In this case, the drink reveals its aromas and is saturated with spices.

Cool or warm?

There is an opinion that white wines are served cold, and red ones - at room temperature. But this is not quite true. If you over cool, for example, white wine, it will become too acidic and lose its flavor. Too cold red wine can turn out to have high tannin concentration, and the taste of wine that has warm room temperature will be indistinct.

wine temperature

So, refreshing and light white wines are customarily cooled to 8-12 degrees. Spicy and intense varieties of wine are served at 12-15 degrees. Glasses for white wine should help the wine to expose its taste, and at the same time maintain its coolness as long as possible. For this reason, the glasses for white wine are narrow with a long stem.

Red wines do not require much cooling. It will be perfect, if before serving the wine is cooled to 14-18 degrees. The spicier and more intense the wine is, the less cooling it requires. Dry red wine glasses have large bowl and not very long stem, so that the drink is saturated with oxygen and has a contact with the warmth of the human hand.

Pairings

It's not a secret that red wine is ideal for meat, especially for fatty or fried meat. In this case, red varieties are also good with spicy dishes, cheeses and pasta. Contrary to the established opinion, red wine can also be perfectly combined with sea trout, salmon and even sushi.

White wine is ideal for fish dishes, as well as poultry. Almost all seafood and caviar, as well as salads with mayonnaise or yoghurt sauces, are great white wine pairings. However, if you plan to drink a dry wine (either red or white) avoid any dishes with vinegar dressings and sauces.

If there are still doubts, follow the simple rule: for food with a complex, heavy taste, light wine will suit, and rich and spicy wine is great for dishes with a mild and simple taste.
